How difficult would it be to replace these gaskets ?

The oil pan is pretty straight forward. If you change your own oil, you can get access the oil pan gasket,
this write-up will help.
The valve covers use a rubber type flexible gasket that you place in the groove of the valve cover...

Also the bolts for the valve covers require a special washer...

The toughest part about changing the valve cover gaskets is getting access to the rear, it is much easier to get access to it when the Spercharger and Lower Intake Manifold are off...

Also, be sure to use correct torque settings to avoid cracking the valve cover and oil pan gasket.
